Help!

So I bought a whole package of tortillas with the best intentions of using them up. We had quesadillas for dinner last night and I planned to make fajitas later in the week. So I'm talking to Russ about whether he wanted fajitas or fish tacos and he tells me he doesn't like either! So now I'm trying to find a way to use up the tortillas before they go bad. Can you freeze tortillas? Any suggestions? Thanks!!

  1. Freeze 'em. They'll be just fine for the next time you want quesadillas. Flour or corn, it matters not.

  2. Corn tortillas can be cut into wedges, sprayed or sprinkled with oil, salted and baked for a few minutes for baked chips. I have also put them into a bowl, pushing the center down and putting in a ball of aluminum foil to keep its shape, then bake to make my own tortilla bowl. Fill with a taco salad.

Honestly, you can spread peanut butter and jelly on a flour tortilla and roll it up to eat out of hand — children, especially, will eat this. For adults, spread with mashed avocado, roll and eat. Or fill with a veggie salad, fold over and go for it.

I know you asked about freezing and that certainly can be done but there are many ways to eat them besides Mexican food.
